A good girlfriend of mine made this for us when we first had Clover. What a treat! She's Asian and I thought for sure it was some super secret family recipe, since her Mom actually owns a restaurant. Per chance she'd be willing to share it, I asked her if I could make it again while my Mom was here visiting. Because as y'all already know, we were in the kitchen whipping up all sorts of goodies HERE.
She laughed hard when I told her and said she'd be happy to share. She said it is one of her favorite easy recipes. Y'all, it's the bomb! You just throw it in your crockpot and voila, tender amazing Italian Beef ready to shred and devour. We made it when my Mom was here and she can't wait to share the recipe with my Dad and brothers.
I also made it for good friends as the husband's father just passed away. This happened right in the middle of them buying a new home. Quite the stressful time. So I doubled the recipe (half for them, half for us) and brought these over to them this past Sunday night. This recipe is getting rave reviews so I can't wait for y'all to try it out too!
Three Ingredeint Italian Beef Crockpot Sandwiches
~3 lb chuck roast
1 packet Italian seasoning of choice
1 full jar pepperocini peppers
1/2 cup of water
(Note: You can adjust the liquid if you don't like you're meat juicy. We do and this seems to be a perfect amount for a 3lb roast!)
Place roast in crockpot. Mix together all other ingredients and pour over roast. Cook on low for 6-8 hours.
Dump out (but reserve) the juice, shred the meat.
Add back in some/all of the juice to your preference, sloppy-joe consistency.
You can also dd another packet of Italian seasoning if you like it spicy/super salty and mix!
Serve on italian or other type rolls with a slice of provolone cheese and maybe additional pepperoncini peppers, if you like some kick.
You can also dump all the juice back in, like we do, and then let it sit in the crockpot on warm until it's dinnertime! Easy peasy and so delish, enjoy!
