So my Mom was just here visiting. We had the best time. We did a whole lot of nuthin. No seriously. No big plans or huge outings. We just had a really relaxing and laid back time. It's always a total treat to have my Mom here. She really does spoil me. She's so amazing about getting me lunch while I'm putting Nash down for his nap or nursing Clover. She was also a huge help with both children. They adore her so much and that's such a blessing to see.
One of the things we got to do while she was here was cook, cook, bake and cook. Nash is at that age where he loves to help. So I constantly just prop him up on a stool and let him help me. My Mom did the same (middle right image above) and he enjoyed every second of kitchen time. I will say there were a few instances where your patience is tried and you have to remind yourself that you're creating memories and NOT making a recipe in record time. Like when our kitchen floor was covered in key lime rinds. Oh yeah. Naughty nelly, ha!
There's something really awesome about just hanging out in my kitchen and enjoying some homemade meals with your Mom. I found we talked about everything under the sun while also juggling Nash and Clover. Here are some of my favorite moments captured above via our Instagram feed. We tried our hands at quite a few new recipes which I can't wait to share. For now I'll share some of my old standby's which I've been rotating in. All just a few ingredients and super easy!

Vegan Peanut Butter Fridge Cookies - Recipe HERE
'Love, love, love these. Walt was actually at the helm for making these on Saturday morning. Perfect to make a big batch and just throw them in the fridge. I love to grab one with a glass of coconut milk before sitting down to nurse Clover. Nash also enjoys about half of a cookie, because they are rich!'
Two Ingredient Vegan Pumpkin Muffins - Recipe HERE
'I could eat these all day long. But I don't. Nash calls these his cupcakes. Two ingredients. Super easy. My Mom is now a believer. She looked at me like I was crazy! And don't hesitate to add some mix-in's in!'
Three Ingredient Cauliflower Soup - Recipe HERE
'You can honestly make this with just a head of cauliflower, but I love adding salt and olive oil.'
