Whole Foods had an amazing sale on Organic whole chickens (we're talking $1.67/lb - cha ching!) so we stocked up and purchased four. It blew of grocery budget for last month but it'll save us some serious moolah this month.
Chicken in a pot...
Veggies we're throwing in there. We forgot to buy leeks so we opted for some leftover fennel. That works, right? It did for us!

Then I got to thinking, should I add some rice to this? Nope. I'm going to mix it up and throw some barley in there!

So this is what we had after it simmered for 45 minutes. That's a serious meal right there!
Bread and butter as a side is sometimes just the treat we're looking for on a cold Austin night. Do you like bread and butter? It's something we seldom have but an addition/side that's kind of my comfort food. It's so funny how food can be nostalgic, isn't it?
