Drooling yet? This is one of my fave recipes and I actually can't believe I'm even sharing it. My Momma's pot roast is always tender, juicy, flavorful and never over done. Since you're probably had your fill of turkey and want an easy weeknight meal for your family, this one will totally do the trick and have everyone smiling ear to ear. Read on, readers for a step-by-step photo recap. You won't even believe how easy this meal is...your family will thank you. Mine sure did!
Momma's Awesome Crockpot Pot Roast Recipe
Directions:
1. Run salt, pepper and garlic powder on meat.
2. In heavy skillet, with 2 tablespoon olive oil, sear meat front and back and on all sides. Totally seal up the meat with the searing.
3. Put seared meat back in slower cooker. Add 2 cups coffee (or beef broth), 2 beef bouillon cubes, quartered onion and copped garlic. Roast on high for four hours or low for 6.
4. Add potatoes, carrots and celery the last hour (or two) of cooking.
Broth, coffee, garlic and onions (plus a bouillon cube for good measure) are all ready in the pot...
...while the chunk of beef is being seared on the stove!

Celery was added the last hour (I hate soggy celery) and the trimmings weren't thrown away. We save those for some serious juicing action later (more on that HERE).
We only opted for steamed asparagus as an added side but this meal was amazing. Look at hubby digging in across the table.
Yeah, it's obvious from his plate that he really hated this meal. Yuck, I'll never make this again for him. Bwah haw haw, YEAH RIGHT! He'd eat my Momma's pot roast every night! I couldn't wipe that grin off of hubby's face, even if I tried!
