We do a monthly supper club with four other couples and this past weekend the host/hostess chose to do a Baconpalooza theme. To put it to you mildly, it rocked! Every single dish incorporated bacon...yep, even dessert. But more on that later this week, we promise. We were asked to bring an appetizer that contained bacon as an ingredient so we searched and searched and even mentioned some options HERE on CasaCullen last week. None really tickled our fancy.
We finally stumbled upon THIS recipe and knew it was the one for us! With a bit of tweaking, we had the perfect app for a memorable gathering. Read below for the recipe and picture recap for creating this wonderful appetizer that's savory and sweet. We hope you try it too because it was easy, scrumptious and attendees even grabbed some of our leftover onion/bacon compote and put it on top of their beef tenderloin. Seriously, the compote is just bonkers good! Enjoy!

Does it look horribly un-appetizing to you? I guess I just know what it tastes like because, to me, I want more, more, more!
Hubby helped by brushing on the olive oil for the sliced baguette crostini pieces.
After we transfered the compote into a bowl, I let it just sit for about an hour. All the juices had soaked into both the bacon and the onions so using tongs, I separated the greasy oil from the compote. You can see how much grease I removed by doing this!
Here's the spread that we took to our dinner party. I am happy to report that there were NO leftovers! Also, we love that the Gruyère cheese is locally made in Austin. We purchased it on our farmers market trip mentioned earlier today.
