This week's recipe was very good. It only got 3 1/2 stars because CC Hubby didn't love it...but I did. He doesn't really care for sweet potatoes but I could eat them in my sleep so I have to cook them every once in a while to get my fill. It's actually a vegetarian meal with some added kick and it was truly perfect for those cooler spring nights. We had leftovers for days so I felt like I was eating this curried stew for a while. Maybe the recipes is better suited for a family of four (and not just two like us) or a great idea for entertaining too.

CC Hubby was heading up the sweet potato peeling and cubing station. He was very intense about getting each piece into a perfect 1-inch cube...I think he's found a new calling!
Oil, green pepper and onion are simmering away in the pot!
A quick two minutes with all the spices added in.
Vegetable broth and sweet potatoes have been added and the whole house smelled like heaven.
The chickpeas and coconut milk are on stand-by just waiting their turn.
BONUS: We added some spinach into the mix too!

Here's the side salad that I made earlier in the day. You want to let this salad soak for a few hours or overnight before serving. It really brings out the flavors and again, try this if you love celery and green olives. Easy and very good...HERE'S the recipe again!
We had spent most of the night diligently working on the layout of our new painted IKEA Lack shelves HERE so there are no pictures of us...to say it mildly, we were looking a tad bit rough. But to gather around our awesome lil' breakfast nook table (which we so love and adore - deets on that DIY are HERE) and nosh on such a filling and healthy meal was quite the treat and much needed!
Mmmm, is your mouth watering? Hope so! I really recommend creating this combo in your own home! We paired the curry stew over brown rice and it was such a great meal. Enjoy!
