Sweet readers, I adore a good soup (Lentil Stew HERE and Tomato Soup HERE) and this here soup recipe is beyond great, grand, scrumptious and delish. We had lima bean soup for days and sometimes having so much leftover soup annoys me, but not this go round. I was actually a wee-bit sad when I had my last bowl for lunch last week.
Why? The creamy texture and perfect consistency was something I wasn't expecting. Honestly, when I got this recipe from my dear friend Shelby I was thinking it would be uber healthy and not really yummy. Sorry lady, but you are such a healthy eater. Boy, I was beyond surprised because this lima bean and leek soup surpassed my expectations.
I wish I had a picture of how fast we both slurped it down. So usually at dinner we chat, catch up on each other's day and generally just spend some quality time together. We were both just ravishing with hunger so it was literally gone in t-minus 2 minutes.
We tip our hats to Miss Shelby because this here recipe will be something we have on a monthly basis. And it's super hard to sneak a near meatless meal past my man, so the bacon bits as garnish really helped too. I wouldn't have changed a thing, the whole bowl is totally divine. And how did my picture fare against sweet Shelby's HERE? I think I like her countertop and chic, white bowl better!
As for those cheddar cheese, bacon and green onion biscuits, I will give them a B+ on their report card for tastefulness. They were nearly an A but maybe that's because we hacked in and substituted the chives for green onions. They were just a wee-bit bland but with some honey drizzled on top, they were pure heaven. You can find that recipe right HERE and I will be trying that again because you already know my love for Bon Appetit recipes, ah hem...Roasted Leg of Lamb and Yukon Gold Potatoes! They make us expand our palette's and we usually try cooking something new, fresh and exhilarating.
